Between the 6 and 8 December, former Noma Mexico sommelier Honey Spencer will join forces with chef Elizabeth Haigh who helped win London restaurant Pidgin its Michelin star in 2016. Dinners—or early Christmas celebrations—will happen at Narroway Studio in London.
Regarding the collaboration between the sommelier and chef, Spencer told GastroInsider: “Turns out she grew up not far from me, and are the same age. We became friends and are both fans of each other.”
During three nights, you’ll have the chance to taste a five-course menu, wine-matched, plus arrival drink; these will be some of the dishes: Chicken and Caviar (buttermilk ramen chicken with caviar, miso mayo, taré sauce), Duck Duck Goose (pigeon, duck and goose pithivier with coffee roasted carrots and smoked XO sprout tops), and Xmas Kaya S'mores (coconut marshmallow, kaya jam and cinnamon biscuit).
According to Spencer, “Elizabeth’s food is so indulgent. She uses a lot of caviar and strong flavors. Christmas would be the perfect moment to showcase her style.” The wine pairings follow the celebrations; the sommelier is bringing what she likes to call “suitcase wines”, which go well with Haigh’s menu.
“I’ve spent the last six years traveling around the world, visiting wineries and producers, and making friends. I literally had to fly to Austria, Czech Republic, or France and get the wines because you can’t really get them in the UK. Some of the wines are small batches of only six,” says Spencer.
